Ever dreamed up a crazy business idea with your siblings? Well Jon-Paul and Chris Willigenburg and their sister-in-law Kate Barton have, and boy has it paid off. That Spirited Lot Distillers is a boutique family distillery in Seaford, Victoria known for producing single-shot, pot-distilled gins the producers describe as big in flavour and oily in texture.

Hot, low, and slow is the way they like to make their gin, extracting the most flavour from the seasonal botanicals they select for production. They use the excess botanical material and fruits – the by-product of producing gin – to make specialty tonic and mixer syrups, too.

Who knew that one mouthful of That Spirited Lot gin could convey everything good about the Mornington Peninsula and Yarra Valley regions. That’s what happens when the team produces their gin with wine from those regions.

It doesn’t just stop with gin either; stop in during the week for coffee and jaffles by their distillery coffee shop, ‘Ghost of Bussy’. It would be rude not to grab a take-away bottle on the way out.
