If you're going to open a wine bar then you'll want an angle. Something to make you stand out from both the competition and the $18 bottles of red people buy because they like the label. Smith Street's Boire ('to drink' in French) has that illusive angle - a direct tap into the French market. Run by French ex-pat, Catherine Chauchat, the bar sources the bulk of its reserve directly from small producers in the Bordeaux region. If you're looking for a boutique wine experience then Boire certainly has the credentials and the stash. The selection might not be as big as some, but you'll find a well-rounded supply of reds you simply can't get elsewhere. These imports are complimented by local labels, French beers and top-shelf spirits. They can also serve up coffee, any kind you like - as long as it's an espresso. House rules. The decor is simple but it does the job; a long, narrow room decorated with wooden tables, a plain concrete floor and a large blackboard that serves as both wine list and menu. Still, there's a certain charm in its simplicity and that leaves Chauchat free to pursue those illusive wines from France.
