It's a pleasure to open this week's column with something equally as soulful as it is delicious. It all started when the builders and developers over at PACE reached near completion of their stylish Collingwood apartments. An unused space out the back became very intriguing to PACE and also to the hospitality eye. With rent, electricity, water and building costs already taken care of, the space provided opportunity for something more impactful than another shwanky Melbourne cafe to move in. It was here that the Co-Ground and PACE pop-up cafe was born, with 100% of all proceeds going towards helping education in Vanuatu. This wholesome cafe opens its doors on Saturday February 4 on the corner of Wellington and Langridge Street. Now you can die a little less inside when subduing to Melbourne's coffee prices and support a wonderful cause. Co-Ground make spectacular coffee might I add.
 
Newtown born Black Star Pastry will also pop-up this February at Cafe Italia in Carlton. They are perhaps best known for their visually adorable and flavoursome strawberry and watermelon layer cake – their celebrity desert on the menu. Yet for me, Black Star's Vegan Chocolate Popcorn Cake garnished with a dramatic mountain of glossy popcorn and haphazardly placed raspberries is most appealing. It's playful, classic and safe for all dietary requirements to enjoy. Black Star Pastry officially opens on Monday February 20 and will live in Cafe Italia for three delicious months.
 
Touching on vegan friendly, I've recently been introduced to Vegan Wings down at South Melbourne's Wings of Glory which truly converted my expectations. Made from seitan – a type of wheat meat, the wings have done exceptionally well for a predominately buffalo wing joint. Yet, I must say, the restaurant's classic chicken wings are undoubtedly their hero dish. Melbourne Chef and owner Stephen Lo made things a little crazier this week launching two new punchy flavours; chilli fla-mango and smokin' gun BBQ – pwoah. For all of you bucket of wings on the couch type diners, Deliveroo and UberEats have you covered.
