So many things. The bit that a guest sees are rarely the same that makes any bar great. A solid bar team, friendly and efficient service, great music, ambience and obviously amazing drinks. The first published reference of the word 'cocktail' is recorded in The Farmer's Cabinet in 1803. A lounger with a hangover at 11am 'drank a glass of cocktail - excellent for the head.
