In the middle of the bustling South Yarra is an exciting addition to the culinary landscape of Melbourne. Though the Yūgen tea bar has already proved to be a superb location for a heightened enjoyment of the drink with cocktails and expertise knowledge, Yūgen Dining is their chance to show off more of their potential.

Though a fresh-faced venue, the esteemed Stephen Nairn takes the wheel on the culinary directions of the restaurant. Using their trusted seafood suppliers, Yūgen Dining focuses on sustainability. By only focusing on what ingredients are ethically available at the time, you can expect this menu to change with the seasons. “We will offer platters depending on the seasons and what’s in the best condition at the market with our trusted seafood suppliers,” says head chef Alex Yu.

This attitude doesn’t stop at the bar, the newly furnished Yūgen Bar compliments the grace of the dining. By sharing a whole manner of ingredients with the kitchen, the Yūgen Bar revels in having cocktails with a vastly distinctive personality.

“We are now at a point where cocktail bar menus are built on a manner of techniques, such as preserving, pickling, fermenting, dehydrating, using alternative acids, etc. These techniques have been used in Asian cuisine for thousands of years,” says beverage consultant Ryan Kimball.
